Ingredients

Scale

8 oz Penne or rotini pasta
1 lb Ground beef (85/15 blend)
4 cloves Garlic, freshly minced
3 tbsp Unsalted butter
Salt and black pepper to taste
1/2 cup Reserved pasta water

Instructions

Boil a large pot of salted water and cook pasta according to package directions.
Drain the pasta while reserving 1/2 cup of the starchy cooking water.
Heat a large skillet over medium-high heat and brown the ground beef until no pink remains.
Drain any excess grease from the skillet.
Lower heat to medium, add butter to the beef, and sauté garlic for one minute until fragrant.
Toss the cooked pasta into the skillet and add the reserved pasta water.
Stir vigorously to coat the pasta in the butter-garlic emulsion until glossy.
Season generously with salt and black pepper and serve hot.

Notes

Reserve the pasta water before draining, as the starch is key to creating a glossy, emulsified sauce. Use 85/15 ground beef for the best flavor balance. Add a sprinkle of fresh parsley or grated Parmesan cheese for extra flair.
